sweet and sour vegetable noodles

This is a slightly adapted version of this River Cottage recipe, for an instant homemade pot noodle. This version is more of a soup, and it's perfect if you need a quick but healthy lunch!

ingredients (for 1):
1 nest of free range egg noodles
1 tsp vegetable bouillon powder
1/2 carrot, peeled and thinly sliced
3 spring onions, thinly sliced
handful sugar snap peas
1 mushroom, peeled and thinly sliced
1 green chilli, de-seeded and sliced
2-3 baby sweetcorn, chopped

for the sauce:
2 tsp soy sauce
juice of 1/2 lime
pinch brown sugar

Put a small pan of water on to boil. When boiled, add the noodles, turn off the heat and leave for about 5 minutes. In the meantime put the other ingredients in a bowl and add boiling water to allow the vegetables to soften a little. Drain the noodles and add to the bowl with the sauce.
