recipe: pecan pie bars

Another weekend gone, where does the time go?!

We spent most of our weekend at home, which meant I had some time for a little baking. I pin so many recipes to my pinterest board, so it's great to have the time to try one out.

The recipe below is adapted from this recipe by just a taste. Take a look at their website for lots more inspiring recipes. This recipe is quick and easy to make, and the result is delicious!

Pecan Pie Bars (makes 12):

for the base:
115g unsalted butter, softened
70g dark brown soft sugar
170g plain flour
1/4 teaspoon sea salt

for the topping:
55g unsalted butter
110g dark brown soft sugar
2 tablespoons honey
1 tablespoon double cream
90g pecans, chopped
sea salt for sprinkling

Preheat the oven to gas mark 4 (180 degrees) and line a 8 x 6" ovenproof dish or pan with foil.

Cream together the butter and sugar in a mixer with paddle attachment (or mix in a bowl with a wooden spoon). Add the flour and salt and mix until crumbly. Press into the ovenproof dish and bake for 20 minutes until lightly golden.

Meanwhile prepare the filling by combining the butter, sugar, honey and cream in a small saucepan and stir over a medium heat. Bring to simmering point and simmer for 1 minute. Remove from the heat and add the pecans.

Remove the base from the oven and pour over the filling, spreading evenly across the base. Sprinkle with a little salt. Return to the oven and bake for 15-20 minutes.

Remove from the oven and allow to cool in the dish. When cool, remove the foil and cut into bars.
